What's for Dinner



Last week was great in the meal department! With Richard gone I was a little extra busy after school and I loved having our dinners already planned. This week I'll be gone on Tuesday night to a swim meet but there will be leftovers in the fridge for those left behind!

Monday: Black Bean Enchiladas
Tuesday: swim meet ...leftovers for those at home
Wednesday: church night
Thursday: Taco Salad
Friday: Shrimp Pasta
Saturday: White Chicken Chili
Sunday: Alice Springs Chicken (link to recipe)

On Sunday I'm going to make one of my favorite copy cat dishes: Alice Springs Chicken. It's from Outback Steak House and I love the flavors. We really enjoyed having two college kids over for lunch this Sunday and if I plan a nice meal, then it will be easy to invite some friends over again. Of course, my family loves it if we have a good meal then too!

What's for Dinner?

I got this sweet notepad for Christmas from a dear friend and today is it's debut!


Richard is out of town until Thursday and the kids are home from school today. I knew if I didn't make a meal plan for this week we'd eat out of the freezer and a lot of vanilla wafers with peanut butter. Not a bad snack, but not dinner worthy.


Monday: lasagna, garlic bread and salad
Tuesday: Breakfast food (because it's my favorite!), waffles & sausage
Wednesday: Kids eat at church!
Thursday: Potato soup & cheese and crackers
Friday: Richard home! Hamburgers, cheese dip, veggies & chips
Saturday: Pizza Day (swim meet out of town)
Sunday: Crock pot pork chops, twice baked potatoes & salad (invite kids from church over?)

Menu Plan Monday - Jan 12 - Jan 18


I haven't done this in awhile, but it feels good to write it down, like putting on a soft pair of socks in the winter...ok, that may be a little over the top...but you get my meaning. It's a treat to be prepared and not have to stand in the kitchen in indecision every night!

Monday - Dirty Rice (my family loves this EASY meal)

Tuesday - Quiche (I bought pre-made crust this week) What DO you serve with quiche? Fruit salad is my only idea!

Wednesday - Chicken Enchiladas (already made and in the fridge!), rotel and tortilla chips

Thursday - Homemade Pizza (pepperoni, sauted onions and cheese)

Friday - Taco Salad

Saturday - Potato Soup

Sunday - Pork Chops (I love having these ready after church and tender from the crock pot)

Menu Plan Monday 10/13 - 10/20




I haven't got any scheduled days to work this week but as always, I've made this menu easy but tasty. It's all about time for me, so with the exception of thawing chicken and boiling potatoes, these menus won't keep me tied up in the kitchen. If you want my recipe for any of these EASY meals, just leave me a comment.


MONDAY - Chicken/Black Bean Nachos

TUESDAY - Spaghetti, Garlic Bread & Corn on the Cob

WEDNESDAY - Freezer Food (before church)

THURSDAY - Grilled Chicken, Basmati Rice & Okra, Family night, Ryan doesn't have a game!

FRIDAY - Potato Soup (Game night??)

SATURDAY - Out of Town! Lauren runs Cross Country in Fayetteville!

Menu - Oct 6-12


Last week was a success, I think I'll try for two in a row!
Monday - TACO SOUP

I subbed at school today and made this EASY soup in about 5 minutes when I got home. Everyone in my family loves taco soup and it's soooo easy!

TACO SOUP
Brown 1 lb ground beef and drain.
In the same large pot add one large can of petit diced tomatoes,
one drained can of corn,
one drained can of black beans (you could change this depending on what you have),
and one can rotel (tonight I just had diced chilis and added them instead).
I also added one packet of taco seasoning.

This is a great recipe to double and serve when you have people over. You can serve it with Fritos and veggies and it takes little prep time.

I let this soup simmer on the stove until dinner. I will make cornbread muffins to eat with it. Yumm!

Tuesday - CHICKEN SPAGHETTI, at Richard's request (6:00 Parenting class)

Wednesday - MOZARELLA BREAD (French Bread) with salad (before church)

Thursday - The girls can make and enjoy BEAN AND BEEF NACHOS. Ryan and I will be out of town for his football game.

Friday - GRILLED CHICKEN WRAPS - Each week is required to have one meal with flour tortillas!

Saturday - PIZZA (after soccer)

Sunday - (CROCKPOT) CHICKEN TACOS

Menu Plan Monday


It helps me so much to post this...
We are busy in the evenings, so planning ahead helps me make sure I have ingredients at home...

Monday - Baked Potato Bar; We'll eat in shifts before and after soccer at 5:30.

Tuesday - Chili; We have a parenting class here at 6:00, so this will be great for easy clean up and the house will smell like I cook!

Wednesday - Dirty Rice and Salad; I use a box mix and ground beef. It's quick so I can make it after subbing half a day and before church.

Thursday - Soft Tacos; Ground beef, cheese, Spanish rice, sour cream, everyone makes their own and I can clean up leftovers quick! Ryan's football game is here at 7:00 PM.

Friday - Chicken Fajitas; I'll be home most of the day so I can marinate chicken and dice peppers and onions. My family loves this meal and if we have any "extra" kids, there will be enough. Served with cheese dip, corn chips and salad.

Saturday - Pizza; During soccer season this is the only way to go! Richard picks pizza up on Saturdays after our games. Festival of Leftovers for dinner.

Monday Meal Plan - May 26 - June 1




Here's another addition of my good intentions! This is my first week off work...preschool was over last week but there's NO SLOWING DOWN! This week includes a holiday and a birthday! ALSO, next weekend we will be at the ball fields all day Saturday and most of Sunday. I do love having the meals taken care of before the week even starts!

Monday: - lunch (we'll all be here) - chicken quesadillas
dinner - (friends over)grilling hamburgers, 7 layer Mexican dip, chips, and veggies

Tuesday: black bean enchiladas (brown beef for the week), homemade salsa

Wednesday: crock pot chicken, corn on the cob, crescent rolls

Thursday: Sheridan's 5th birthday party! Finger foods and cake! (more details to come!) (Ryan has a ball game 30 minutes away and the girls have swim team practice, should be an exciting night!)

Friday: soft tacos, Spanish rice, refried beans

Saturday
: hosting baseball tournament, no meals at home

Sunday
: eat leftovers from Sheridan's party (crackers, meat & cheese, fruit, etc)

Monday Meal Plan - May 18-24


Last week was wonderful! I was so relieved to not only have a plan...but on the days when the plan wouldn't work we had food in the house for flexibility! I had forgotten about a fund raiser dinner on Tuesday night and Wednesday night Richard isn't home for dinner. Also, on Thursday we had a band concert and so dinner needed to be early and quick. It all worked out...and I'm lovin' the plan again!

dinners only:
MONDAY: chicken and rice, corn and raw veggies

TUESDAY: crockpot swiss steak, twice baked potatoes

WEDNESDAY: soft tacos, spanish rice, beans

THURSDAY: chicken spaghetti, green beans, garlic bread

FRIDAY: (I'll be gone) taco soup, chips and salsa, cheese and crackers

SATURDAY: (I'll be gone) leftovers from week/ pizza

SUNDAY LUNCH: pork chops, baked potatoes

Meal Plan Monday - May 12-18




OK,I've been very anxious to post a menu. My teaching "neighbor" always asks me what I'm having for dinner...and it's put me on my toes!

I just finished reading Karen Ehman's new organizing book (http://www.karenehman.com/home/) and she inspired me to put together a 14 day menu rotation.

It's my first week, so it all sounds good so far. Last night I browned ground beef for my first two dishes and made the enchiladas and lasagna. It was so awesome to put the meal in the oven tonight and take my kids to swim team practice. Dinner smelled great when we got home! Victory for a busy mom...

Anyway, here goes. If you don't know me, my personal cooking philosophy is, "If it takes longer to make than it does to eat, it's too much time in the kitchen." Everything I make is easy and I do get compliments on my cooking!

Monday: black bean enchiladas, corn on the cob, raw veggies & Ranch dip

Tuesday: lasagna, garlic bread, salad (I just remembered we're going to the band's fund raiser spaghetti supper! Oh well, there's a lasagna in the freezer for later!)

Wednesday: crock pot chicken, biscuits, green beans

Thursday: pork chops (grilled or crock pot), potatoes (mashed or baked), raw veggies & Ranch dip

Friday: grilled chicken, black eyed peas, salad

Saturday lunch/dinner: chicken quesadillas (use remaining grilled chicken from Friday), chips and homemade salsa

Sunday lunch: garlic chicken, wild rice
